Is there any legal course I can take if my mother is changing the will she and my father agreed on long before he died (he died in 2001). Her memory is affected either by strokes and/or dementia and is wanting to leave more to a son who is a Level 3 sex offender, she doesn't remember that's why he was cut out, and she will not believe that he is a criminal.

A person must be competent to write a will. If your mother is not, then the will can not be valid.
If you are concerned about this, I would speak to her attorney (someone has to draft the will for her) about the competency issue and ask for his advice.
