One lady working in our organisation she is used 50000-00 shop money for personal use,after we came to know she is accpeted and ask for 5 monthes time, and given us 3 empty cheque without date and amount,know she is not payeeing any thing,she is widow having 2 daughters.what to do

as she was working for you and she is a widow with two daughters, better compromise the case for humanity sake.
Legally you are entitled to file a criminal complaint with police for criminal breach of trust, theft, cheating. You are also entitled to use the cheque, deposit and if bounnce then file another complaint for bouncing of cheque.
you can have the cheques filled with the correct amount due from the drawer, with a date which is well within six months and present the same . If they bounce you can take action under Sec.138 of the Negotiable Instruments Act. If she has no properties worth proceeding against, better write off the loan and live in peace.
