My significant other and myself would like to terminate the parental rights of my son father so that he may be adopted and his name may be change; paternity has not yet been established in court. Do I need a lawyer for everything and where do I start?

First step would be to marry. That's an important step. After that, you do need a lawyer. Lots of things to do.

The easiest way is for your significant other to become your spouse and step parent to the child. File for adoption and obtain the consent to adoption of the bological father. You definately should have a lawyer!
