If someone signs an Acknowledgement of Paternity, then finds out the child is not theirs, will the law still make that person support a child that is not theirs?

Unless the father does something to attack and try to reverse it, yes. Father needs to sit down with an attorney and discuss all facts of the case or be prepared to pay support for 21 years.
