can someone be prosecuted for "auto theft" for defaulting on their auto payments?

Generally, the title is in your name, with a lien in favor of your lender. If that is your situation, then no, you could not be prosecuted for "auto theft" since it is your car. The lender could only sue you for your obligation to pay them pursuant to the promissory note.
