are grandchildren named in a grandparent's will as recipients of the estate entitled to see a copy of the will. or how do we determine what exactly was the estate?

All persons entitled to a share of the estate are entitled to receive a copy of the Will. The Executor or the attorney should provide you with a copy.

Under New York law, all distributees are entitled to a copy of the Will. But to determine the contents of the estate, you should either request an accounting of the estate from the executor (if there is one), or petition to be named the executor yourself and begin the fact finding process.
