if my daughter signed a lease on a house when she was 17 and neither mine or her fathers signature is on it, is it a binding contract still?

If she paid rent the month after she turned eighteen, the lease may be deemed to have been ratified by the now adult tenant. If she is still seventeen, she can repudiate it and cancel it, if she has not moved in.
