Service Quote vs. Actual

We were quoted a total of 7,750 dollars for a roofing service. Approximately 1 month after recieving the quote we called them asking them to begin immediately. We placed several calls to the company over the course of a year before they actually began roofing. The job is now completed and we have just recieved an invoice for a total of $9,350 the company's reason for the increase is cost of materials have increased, and additional materials were needed. We disagree with the company that this is our responsibility. Are we obligated to pay? If we were to fight this what would be our course of action?

Pay the amount you agreed to pay, with a properly worded and placed restriction on the endorsement. Consiedering you're talking about $2k here, it may be worth it to have an attorney do the restriction wording and communication for you.
