Is there a law against being legally married to someone and listing someone Eles as your wife or husband?

It depends on what context that non-spouse is listed as a spouse. If it is just on some kind of social network site with no intent to secure something by fraud, then no. If it is on some sort of application to secure a benefit, then it is fraud. If it is on a form used to report information to the U.S. government, then it is a federal criminal offense.
