If your employer inadvertently pays you more in your paycheck than was initially agreed upon at hiring, catches their mistake months later, can they then deduct the overage out of your next paycheck?

Yes. You were not entitled to the money, so they are able to recover it from you. To not give it back would actually be a crime.
