RE: $700 fell out of a stove while I was doing maintenance. My boss was around in the apartment, so thinking I would get in trouble, I give it to him. Nevertheless he kept the money. Is there a law that after 30 days if the money is unclaimed that the original finder gets to keep the money?

I'm unaware of any set time period in which lost or mislaid property automatically becomes that of the finder. The money always belongs to the "true owner" of that money, likely the individual who put the money in the stove, or perhaps even the individual from whom that money was unlawfully taken and then placed into the stove. However, I think what you're asking is whether you're entitled to the money because you found it. The answer is no. Even if the true owner of the money never claims it, you found the money in the scope of your employment on the premises belonging to your employer. Therefore, your employer has the better claim to the money, in the event the true owner does not claim it. If your "boss" is just a supervisor and is also an employee of the company you work for, then he should have turned the money over to your employer/the actual owner of the premises.

I'm assuming that you were doing maintenance on a stove in an apartment that was no longer occupied, is that correct? If the apartment was still occupied, and the renters had not abandoned the premises, then your boss not returning the money to the renters is actually theft, not a case of "finding" money. You could also be an accessory to theft if you knew the money was taken from the apartment that was currently occupied and not returned. Otherwise, if the apartment was vacant, and the money was abandoned by the previous tenants, then your employer is entitled to keep the money if it is unclaimed.
