If I decided to send a few anonymous emails (using an anonymous website who display my IP address) to a girlfriend in Louisiana about her cheating spouse is it considered defamation?

Truthful statements can never be defamatory. But they can be actionable for other reasons. Even if the law is firmly on your side, you could still be sued and have to defend yourself. I can imagine reasons why either or both of the spouses would come after you. Without information either about the facts, about what you want to say, or about how you want to say it, I can't tell how much exposure you might face.

But even if sending these emails would be legal, you should ask yourself whether it's the right thing to do. You would likely cause serious emotional harm to someone you claim to care about. If you really think this is something you should do, why not tell her directly instead of hiding behind an anonymous ID? And since you call this woman your girlfriend even though she's married, I don't think you're in a position to condemn her spouse for cheating.
