Legal Question in Credit and Debt Law in Louisiana

I work for a finance company in Louisiana and want to know if it is legal to garnish a spouses wages for a debt they did not sign for. One loan has the spouse listed as income and the other one does not.

You can only garnish someones wages by obtaining a Judgment against them for a certain amount and then by requesting the court to order an income assignment/garnishment. When a suit is filed against the parties, if they did not sign for the loan then they have that as a defense. If it is a community debt, then the non-signing spouse's income could become involved.
