Power of Attorney
My grandmother (81) was affected by the Hurricane Katrina , her house has been deemed unlivable and now is living with me in Maryland. She want me to have Power of Attorney over all her affairs because being in a different state makes it difficult for me to handle her problems in Louisiana. My questions is what kinda of POA do I need? If I should be placed on her deed to her house ( because she wants me to sell it when it is fixed)? and What other legal documents should I have in place for her care as she gets older?

You would need a general power of attorney to handle your mother's business. It should be as specific as possible. If she had bank accounts in Louisiana, the POA should include the account numbers.
As for dealing with her home, it would not be practical for her to put your name on the deed. When the time comes to sell the home, you will need a special power of attorney for that purpose. This POA would include the legal description of the home and other specific details.
