My fiance has a child on the way and the baby mother days she doesn't want him part of the child's life and she don't want child support from him. Can this be legally documented so that child support can't be filed in the future

Nope. A father should support his child. If you have a child by him and you split, is it OK for him not to pay? If the mother has a "fiancee" who, AFTER THEY ARE MARRIED, wants to adopt the child, then that is substituing a father who does not want the child for one who does. If there is no fiancee, then your fiancee will have to support his child.
