Parental Rights

If a child is born, from a one-night stand, and I don't want anything to do with the child or mother, is there any way that I can sign over all legal parental rights to just the mother, so that I have no obligations to the child? Are there any legal papers to file to even say this, if the mother has not asked me to sign them over?

If the mother (or the State if mother gets government benefits for the child) wants to obtain child support from you, she has that right. The court will not see it as benefitting the mother but as your obligation to provide for the child.
