If my teen son gives guardianship of his son to a relative, does he still have to pay child support?

If the guardian seeks child support, he could be ordered to pay. Guardianships are often given merely to allow the child to go to school in a jurisdiction other than the parents.

Yes. Why not let them adopt since he wants the child to call him dad but he does not want the responsibility?

#2 If he is ordered to pay support and give the guardianship and fails to pay for 6 consecutive months the person having custody can then file for intrafamily adoption. If it is a stranger who has guardianship, they can file to terminate his rights for financial abandonment and then adopt. Especially if the mother agrees that the child should be adopted.
