Even uncontested divorces carry issues within them. Unless you have no property and no children those issues can get ugly despite your best efforts. Having the right documents written, and if necessary approved by the court, now instead of waiting for a problem to arise is a smart strategy. It is also relatively inexpensive.
You are free to shop lawyers. You can sit down and say, "we have agreed on child custody and community property, what does it cost to properly draft the documents."
One year later when you and she accidentally schedule family vacations on the same days it will help resolve who vacations with the kids.
