my fiancee sold a dog using a handwritten contract it was changed to accomadate the situation the buyer has dissapeared with the dog and refuses to pay is the oral contract binding?

The written contract is binding. Oral contracts are valid, but if you can't absolutely prove that the agreement was modified by mutual consent, the written contract is binding.
