Will a non-compete contract hold up in Louisiana if employees were forced to sign it years after employment, not all employees of their type were made to sign it, the conditions of employment including wages and benefits have changed since signing it, and they have not pursued other employees who have left to go to competitors?

If the non-competition agreement complies with the requirements of Louisiana law, the answer to your questions are Yes (unless the non-competition agreement is contained in a contract that makes its enforcement dependent on any of the conditions you outline above - which is doubtful).
You should sit down with an Attorney to discuss it because there are too many questions that need to be asked. My question is why would someone agree to a non-compete and sign it AFTER they are terminated. Were they facing criminal charges if they did not?
