how do I legally evict my ex girlfriend who won't leave in louisiana?

If she is not on your lease, or if you own your own home and she is not an owner, you don't need to file any eviction. Just call the police and show them your lease or Act of Sale. They should remove her. If she is on the lease, she has a right to be there, so you will have to talk to your landlord and your ex and work something out.
Of course, the best course of action is to simply talk to her like an adult instead of taking drastic measures like filing lawsuits and getting police involved. Tell her she needs to go, but give her time to find a place. Unless she shot your dog, spit on your mother, slept with your brother, or is running an illegal gambling hall in your spare bedroom, there shouldn't be any reason you can't let cooler heads prevail and end things without getting the law involved. Trust me, it will be much better for both of you that way. You will both feel like you lost if you call the police or file an eviction.
