Procedure for getting a trial date

I am scheduled to appear in Louisiania for a speeding ticket, however, i plan to plead not guilty and ask for a trial date

Since i live in Maryland, and the ticekt was in Louisiania, what is the best way to plead not guilty, ask for a trial date, and alo have written documentation for the entire process so that no one can come back and claim otherwise.

Without knowing exactly which court one cannot properly answer this question. Each court has its own local rules.

Some might allow you to file a written not-guilty plea. Some might require a physical appearance. Contact the clerk of court or a local lawyer of that community for that particular court's requirements.
