What constitutes "undue influence" in Louisiana pertaining to what I believe is a manipulated will?

It is influence so severe that the accused person has actually substituted his will for that of the person who drafted the will. The influence must have taken place at the precise time the will was signed and there are different rules depending on whether the person was related to the testator or not. It is very difficult to prove and you need to talk to a lawyer to get all of the facts analyzed properly.
