If I write my own will and have it notarized will it be a legal and valid document that stands in court in the event of my death? I want to include a trust for my minor daughter

If you plan to set up a trust you should consult a lawyer who handles estate planning.
Even if you do not establish the trust, I believe that the will probably should be drafted by an attorney. This costs less than you think and can prevent future problems.
