can I list NSF checks when filing for Chapter 7?

Yes. In fact you must list them, as they are debts. All debts must be listed. Whether they are dischargeable will depend on whether you had fraudulent intent in writing them. Also, understand that except in exceptional circumstances, any criminal prosecution for bad checks is not stopped by the bankruptcy filing.
