if you are required to wear a uniform and the company inform you that you must pay a $200 deposit, can I request them to put the money into an interest-bearing escrow account???

You can request it, but there is no obligation for them to do so. Moreover, at current interest rates you would earn less than $1 in a year. Is it worth it to potentially antagonize your employer?
