Do every pleading sent to defendant must be restricted mail or just the Complaint?

Generally only the initial pleading (the Complaint) needs to be personally served. The rest can usually go by regular mail with a certificate of service.

The Rules of Civil Procedure give more detail about service of motions and other court papers.
