What, if any, is the difference between obtaining ''gaurdianship'' of a minor and ''gaurdianship of minors estate''? Can I have one without the other?

Guardianship of the minor is the ability to make "parental" decisions. Guardianship of the property (estate) is the ability to control the assets of the minor.
