How does an order of default work without a current address?

Your question is too vague to answer meaningfully. If a defendant has been served with the suit papers in compliance with the rules, and fails to timely answer, the plaintiff can seek a default by providing the court with the defendant's last known address. If there was invalid service then there is no entitlement to a default. If a default is entered, the plaintiff can proceed with the case without the participation of the defendant.
