Do I have to have a witness present with me when going to a custody hearing as the plantiff representing myself?

You do not need a witness present with you when you go to a custody hearing if you are representing yourself (called representing yourself "pro se"). You are making a HUGE mistake going to the custody hearing along. Did you know that if the other spouse is the money maker in the family and you are not, that the other spouse can be forced to pay YOUR attorney fees?
