Various lawsuits have been filed on similar fact scenarios. While an employer can legally require employees to take breaks, if the employer forces employees to work while "clocked out," that usually violates the law. What amounts to forced work on breaks is often disputed. "Deleting" work days also is very problematic. In some cases time can be legally altered (if the employee left early and forgot to clock out for instance) but the law requires that hourly employees be paid for all time worked.
