My former employer made me sign a paper sayin I would not sew them and that I was not eligible for unemployment after I quit they aswell deducted $350 for certifications and safety gear is there anything I can do about this?

Generally an employer cannot force a departing employee to waive statutory rights (like unemployment or workers' comp). However, an agreement not to sue may be binding depending on the circumstances.
An employer cannot generally deduct from paychecks except for a few limited exceptions. If an employer violates the law by not paying wages earned, it is possible to assert claims for the unpaid wages, together with extra damages.
