Protection from suncontactors taking my clients
Is there a form/contract that I can have subcontractors sign to protect myself from them taking my clients if they decide not to work for me anymore?

The type of contract you are referring to is a non-competition contract. Sometimes it is referred to as a "non-compete" or a non-competition clause if it is just one part of a contract.
You may be able to find a form contract in a do-it-yourself legal book or software package. (These are not a good idea as they are not specific to your situation, but people use them anyway.)
