when contesting a subsequent ruling at an appeal of a criminal trial, are supporting documents put in the appendix or in the addendum of the brief?

As an initial matter, you should not try to write a pro se appellate brief. That said, documents from the record (i.e., documents filed in the court docket and exhibits admitted at trial) are to be included in the record appendix, and any written decision that you are appealing should also be included in the addendum.
