If I were to hypothetically use a super-soaker (water gun) filled with spoiled milk against the protesters of the Westboro Baptist Church, what legal action could I face?

You could be arrested for assault and battery. The District attorney may even enhance the crime by claiming you used a dangerous weapon or that this was a hate crime. You could be fined or jailed. In addition, you could be sued civilly for assault and battery.
