Regarding Larceny

If someone is caught stealing, but returns the merchandise to the store immediatly, is this considered larcney. Also, can the owner/manager of the store press charges? If so, what process would they have to go through, and how long would it take? Would it cost them money to do so?

Larceny requires an intent to permanently deprive the owner of the item.

So in your case, it depends when you returned it: before or after you were caught.
