my soon to be ex husband wants joint custody of our two year old son, but he has a history of violence and has recently been displaying increasingly erratic behavior will a judge grant my request that he undergo a psychiatric evaluation

First, joint custody does not mean joint physical custody. Usually the child will spend time with each parent. Joint custody means you are both involved in decisions regarding the child's education, health et cetera.
You want sole physical custody and you may want him to have supervised visits with child based on anger and violence issues.
If you do not have an attorney, get one. A judge may or may not grant your request for a psychiatric evaluation. It will depend on the evidence presented by you and your soon to be ex.
