What do I do if the plaintiff responds to the court summons with a motion to dismiss?

Do you mean the defendant? Typically a plaintiff would not move to dismiss his or her own case, but there are exceptions. Assuming you mean the defendant, you will need to prepare an opposition to the motion to dismiss explaining to the court why your case should not be dismissed.
You should think about retaining counsel if you do not understand your rights or how to put forth your best possible case.
