what rights does the land owner have from the state ''taking'' land for endangered species?

There is a difference between taking land and prohibiting you from using or developing it.

If they are "taking it" by condemning it for public use, then it is an issue of compensation and justifying the amount or arguing it is not appropriate state interest to take your property.

If you consider it a taking because they are limiting your use, the answer to that question will depend on a great deal more information than you have provided.
