We have asked the probate lawyer (MA) of my dad's estate to remove himself as the probate lawyer on record. How long should that take?

It depends. If there are pending matters, you may have to have another attorney file an appearance before your current attorney can withdraw -

It will depend on the status of the matter. If there are no disputes, not long. It will happen faster if you are replacing one attorney with another.
