You can get a copy of any probate file by having someone go to probate court and copy the file. Any inventory Will etc that are filed with the court are available for review. You only need to check the Probate court in the last county your father lived in prior to his death.
If you are not a named beneficiary of the Will or Trust, then you are not entitled to a copy of the information you want, so you need to have someone go to the Probate Court.

You can contact the Probate Court and ask them to send you a copy of any inventory which has been filed. However, that document will only show the assets which go through probate. Trusts, life insurance, and so forth pass to the beneficiaries outside of probate.
If you are not getting any cooperation, you should consider hiring an attorney. I have been practicing probate law for a decade and would be pleased to be of assistance.

I am sorry for your loss of your Father.
Retain an attorney to petition the court to order the executor or trustees to provide the information you need . Good Luck!
