If you have a signed contract for services with installment payments agreed upon, can the client change the amount in the middle of the contract?

As a Franchise Attorney I agree with the other attorney answer. Usually, before a contact can be changed (amended) both parties have to agree to the change in writing. Consult with a good business or franchise attorney in your area for specific advice.
