Is it illegal to read someone else's emails over the company server?

Probably, it is what is called a tort, meaning a legal cause of action for civil damages, if there was a reaasonable expectation of privacy. However, many companies tell their employees that email over company servers is fair game for management to read. Bill Stern

No. You don't have an expectation of privacy in company email. The email technically belongs to the company, although there may be exceptions for correspondence about personal matters with human resources.
Step one is to check the company email policy.
