Legal Question in Consumer Law in Michigan
we ordered new countertops to be made up by a local company, when we went to inspect them, the ends were all done poorly, the owner's wife even said she wouldn't accept them as they were, we gave them the chance to fix them, twice. They still aren't correct, are we obligated to keep dealing with this company or can we simply just walk away from this nightmare. We never signed anything and we haven't given them any money yet.

You have an oral contract, which may not be enforceable, depending on the amount of money involved. Essentially, they agreed to manufacture an item that would meet industry standards for quality/workmanship, and you promised to pay whatever the agreed upon cost. They were foolish to not have you sign a contract, but you would be foolish to pay for substandard work.
