In case of death request for children

When my fiance and I leave for our honeymoon, we want to ensure that in the case of our death our children are taken care of and not thrown into foster care. Will a notarized letter be enough to make sure my parents can take care of them, without any problems?

Nothing can "make sure" but a notarized letter may be helpful. I'd suggest that you'd be better off letting an attorney draft documents for you including wills. These can be more useful with the child issues and other issues.
