What types of paperwork should I have available for an adminstrative hearing that pertains to one party claiming I was an voluntary quit and I claiming that I was forced to quit.

"Forced to quit" seldom wins at the MESC. Short of them asking you to commit a crime, you'd better be prepared to submit some very strong and easily understood evidence.
If your argument is "I felt that I had to quit or I could'nt take it any more" without any facts to back it up, you lose.
