Legal Question in Employment Law in Michigan
My company just hired someone a week ago and bought them uniforms. Can we recoup the cost of those uniforms from his pay if he stopped showing up to work without any notice?

Strictly speaking, no. According to the DoL you must advise the employee at hire that the cost of the uniform will be deducted from his final pay if he quits.
However, since the employee is guilty of embezzlement, it's unlikely that he'll file a complaint.
