legal question on a lease
on a lease can a landlord cross out where it says month to month lease and put one year lease upon the both of us signing the lease, i had already given her my security deposit and rent.

If you have already given your security deposit and agreed to the terms of the lease (month-month) then the elements of a valid contract have likely been met. Once a contract is made, additional consideration would be required in order to change the contract. If you did not give any additional consideration (such as money or an additional promise), then the modification is not legally enforceable.
