I recently left a company in Minnesota were I worked for 5 plus years , I was tipped off that they were going to fire me so I quit , my customers asked to me to contract , I since strated my own company , can the previous company I worked for come after me legally

Yes, your previous employer could come after you. There are several causes of action that may be applicable, but it is impossible to determine without more facts. Some of the more important facts would be whether you executed any agreements that would prohibit you from competing and whether you are using any of its trade secrets or confidential information. Generally, the law will not prevent you from earning a living, but that does not mean your previous employer will not try to stop you.
