Legal Question in Business Law in Minnesota

I am in a non-profit booster club (501c3) for kids in HS group. We have a trip planned, and a parent that is interested in donating the cost of the trip to a needy student, but wants to do so anonymously.

Any problem(s) / concerns in directing the monies to an individual?

We are a small (< $25k per year) non-profit (don't file taxes).

There should not be any problem earmarking an individual's donation for this purpose. If the club were using gambling proceeds there would be concerns, but this does not appear to be the situation since it is under $25K. You should, however, review the club's conflict of interests policy to make sure it is in compliance. Only mention this because I do not know whether the student's parent is a club member or director.
